My favourite lemon pie

This is my favorite lemon tart. Sometimes I also make it from lime, in which case the lime key pie recipe is followed. I personally don't care for the meringue with the lemon tart, but the whipped cream balances the flavors just right. I usually make meringue or, for example, Budapest pastries from the leftover eggwhites. I've started using homemade digestive biscuits and condensed milk, but store-bought is at least as good

Pie crust 

approx. 200g of gluten-free digestive biscuits 

100g of butter

Filling

5 Egg yolks 

1 can of condensed milk

1 dl lemon juice

Heat the oven to 150´c

Crumble the biscuits and mix with the melted butter 

Spread the base in a greased pie tin and pre-bake for 10 minutes 

Heat the oven to 175´c

Mix egg yolks and condensed milk

Add lemon juice

Carefully pour the filling over the base and bake for 10 minutes 

Cool properly and enjoy with whipped cream
