Easy carrot cake

This must be one of my favorites. Sometimes I change carrots to apples… Depending on what I have home.. But I like to eat this cake with a lot of frosting.. So hope you like frosting as much as i do..

Carrot cake dough

2 dl sugar

2 eggs

2 dl GF flour

2 teaspoons baking powder

1 dl oil

3 dl grated carrot

hint of salt

some cardamom




1.Beat the eggs and sugar until foamy.

2. Mix the dry ingredients together and combine with the egg sugar mixture. Add oil

3. Grease the cake pan (I usually use butter and coconut flakes)

4. Bake at 150´c for about 45 minutes (depending on the oven)






Cream cheese icing

200g cream cheese

60g butter (room temperatured)

4 dl icing sugar

2 tablespoons lemon juice (+ lemon zest if you like)

  1. Take your butter out of the fridge

  2. Mix everything to a smooth mix

  3. Decorate your cake with your icing
