Gluten free fruit & Nut Crackers deluxe

Fruit & Nut Crackers deluxe

2.4 dl gluten free flour

1 tsp baking soda

1 1/2 tsp  salt

1 tsp dried rosemary

1/8 tsp black pepper

1.8 dl   dried fruit, chopped (apricots, figs, dates, raisins, cherries)

1.5 dl  nuts or seeds, chopped (pecans, pumpkin seeds, pistachios, walnuts, almonds, sunflower seeds etc)

2 tbsp flaxseed 

2,4 dl milk of choice 

0,25 dl  honey

Preheat the oven to 175´c  and line a loaf pan  with parchment paper.

Add all ingredients except milk & honey to a mixing bowl. Stir until well combined. 

Mix  the warm milk and honey.

Mix everything together 

Put the dough in a loaf pan 

Bake for ~40 minutes, or until a toothpick comes out mostly clean.

Let cool to room temperature

Slice in to ~ 1 cm slices 

Place on a baking sheet ( with or without parchment paper) 

Bake for ~  15 minutes, then flip each cracker over. Bake for another 15 minutes, then check for doneness. If they aren’t quite done bake for another 5-10 minutes

I left my crackers in the oven to afterheat 

Everything has to do with your oven as well, mine is gas and everything takes a bit longer time with it 


To store your crackers, allow them to cool fully and then place them in an airtight container.
